Fresh Green Beans with Grilled Veggies and Smoked Bacon. An awesome treat for your favorite Valentine.

Well, it is not an interplanetary mission this time. However, our SuperHero managed to save a very special couple from the clutches of his evil nemeses, BoreN’GFood. The ever-popular Romey is known worldwide as a famous Singer/Entertainer. Young female fans can’t seem to get enough of his abs and puffy undergarments. And, of course the hair. But Romey has a deep secret that he has been hiding from the world, lest it ruin his wildly successful career.

It seems, Romey’s in Love, much like his favorite cousin Chucky. …Not with Chucky. Romey has fallen hard for a young maiden named Julliette.

Valentine’s Day is coming. Our fair lady Juliette is bored with late night, clandestine forays to trendy diners. Juliette’s family is dead-set against her relationship, because famous lads like Romey aren’t known for treating damsels with much respect. They think she should start a career of her own.

TasteeBQ to the Rescue! Using a special Global Satellite Posting Device, a forlorn Romey was surprised to receive such a rapid response from our Hero. [The wonders of what they call “Email”.] Together, they developed a scheme that would not only please Juliette, but would prove to the world (i.e. her family and his fans?) the great Legendary potential of Romey and Julliette’s relationship.

A menu was created of 5 SIZZLING HOT ROMANTIC DISHES for Valentine’s Day.

MENU:
-Smoked Mussels with Bacon and Spinach
-Spicy Smoked BBQ Oysters
-Green Beans with Grilled Veggies in Bacon Dressing
-Grilled Ribeye Steak
-Garlic Heart Toast

Our SuperHero proclaimed:

Grilling is an excellent choice. Couples have cooked over the open flame since the times of our ancestors. For some women, it was a hair-raising experience. In fact, Grilling is one of the first forms of Cooking. Prior to that, Cavemen specialized in preparing Sashimi and Tar Tar. Making such a Grilled Feast for your Beloved is surely more Romantic than signing a check at some overcrowded eatery.

Fortunately, Romey owned a shiny new Charcoal Grill with the best accesories: BBQ Tongs, Spatula, Charcoal, Lighting Fluid, Oven Mitts and Wood Chips. Not to mention Romey’s state-of-the-art Gaggenau Kitchen. [OK we did].

It had been decided that TasteeBQ should use his Powers of Disappearance before the arrival of Juliette. Otherwise it could be Awkward(!?). Plus, why shouldn’t Romey take credit for these dishes that would melt anyone’s heart? [Assuming they have one.] He and Juliette would have a romantic night alone. An unforgettable night, like a Love Song.

With mere hours to spare, our Hero flew to the store and returned with all of the necessary ingredients (which are Capitalized for your Shopping/ Pantry Checklist). In less than an hour, they were able to complete all preparations.

First he had Romey clean 8 Oysters and 1lb. Mussels and place them in one layer on a double plied Aluminum Foil basket. Then cut (1 each) Yellow and Red Bell Peppers, in half. Next he peeled 1 Large Carrot, and cut it lengthwise into 3 thick strips.

For Romantic Nights, be sure to eat lighter by serving lots of Veggies and smaller portions of Meat.

After rinsing and drying 2 (8-10oz.) Ribeye Steaks, he made a Marinate consisting of 1 cup Creamy Italian Dressing, 1 tbs. each Garlic, Thyme and 1 tsp. BBQ Seasoning (or Rub). He then Marinated the Veggies and Steak in separate Foil baskets. He was also sure to sprinkle Salt, Pepper and BBQ Rub on both sides of the Steaks.

Who knew cooking was so easy? Romey then rinsed and cut the tips of 1lb Fresh Green Beans, placing the Beans in a Microwave-safe Bowl with 4oz. Water, and covering it with Plastic Wrap. Onto the Garlic Heart Toast. He mixed 1/2 cup Softened Butter with 1tbs each Garlic, Thyme and added a dash of BBQ Rub for fun. Using a Heart Shaped Cookie Cutter, he created 6 Hearts using Thick Sliced Sourdough Bread, spreading the mixture on both sides. Lastly, he coursely Chopped 1/2 cup Fresh Spinach and folded it into Butter Mixture.

Cook large portions of Vegetables on Grill. Chop afterwards, once cooled.

Romey proceeded to fire up the Grill with just enough Coals to heat one half. Then he immersed Wood Chips in Water, using a Small Bowl. Once the Grill was ready, he spread 1/4 cup Wood Chips over the Coals. As a final preparation they placed 6 Thick Bacon Strips (Turkey ok) on the Grill, on the end farthest from the flame. They Grilled the Bell Peppers and Carrots for 4 minutes on each side. Letting them cool, the Veggies were cut into short Julienned Strips.

Juliette arrived to Romey’s crib, expecting to be “surprised” with another typical restaurant reservation. She was pleasantly astonished by the aroma of smoked food, emanating from her Boyfriend’s patio. By now, our hero TasteeBQ was “in the wind”, as they say. There was no sign of BoreN’GFood to be found.

Romey greeted Juliette with a hug, Roses and a box of Chocolates. He started to woo her by saying “You’re Beautiful.” But Juliette interrupted with “Baby, Baby when are we gonna eat?”

 

Grilled Ribeye Steak

In a Flash(!), Romey replenished the Wood Chips (for smoke) and placed the foil basket of Oysters and Mussels in the middle of the Grill (near but not directly over fire) for 8 minutes. Then he put a pinch of the Spinach/Butter Mixture on each Mussel. While crisping Bacon over the heat, he quickly seared the Garlic Heart Toast (1-2 minutes, per side). Crumbling the crispy Smoked Bacon over the Mussels, Romey was able to serve a delighted Juliette in a short 12 minutes. Fresh Lemon Wedges and green Parsley garnish made the Plate.

As she ravished the Mussels, Romey returned to the Grill to fetch the Oysters, which easily popped open with the use of a Paring Knife and Oven Mitt. He sprinkled some Spicy BBQ Rub (w/Cayenne or Red Pepper) over the Oysters and added Lemon Wedges. Soon Juliette was swooning “What’s Next?.”

Not wanting to waste time steaming a pot of Beans on the Gaggenau stovetop, Romey popped the prepared Bowl of Green Beans into the Microwave on High for 5 minutes. In the meantime, he Grilled the Ribeye Steaks on the open flame, 4-5 minutes per side, closing the Grill to let them cook through for the final 2 minutes.

Romey returned to the kitchen to add crumbled bits of Smoked Bacon into the Italian Dressing Mix, then he folded it into the strained Green Beans, along with the chopped Carrots and Bell Peppers. The Bowl was covered and returned to Microwave to cook on High for 2 additional minutes.

Ding! Ding! Dinner time. After plating the Steaks, the Boyfriend placed the Green Beans in cute Heart Shaped Souffle Cups, and sprinkled them with bits of Bacon. He served it with Garlic Heart Toast and Julliette ate it up! Literally.

Romey had planned to enjoy the Chocolates next to the fireplace after Dinner. But Juliette had other plans in mind… The next day, Juliette wowed her family by texting pictures of the Valentine’s Day feast from her iPhone. Somehow, the photos were leaked to the Tabloids. Soon, the world learned the true story of Romey and Juliette. Instead of receiving “hate mail” from Romey’s fans, Juliette was surprised to read so many letters saying “Congratulations!”, “You go Girl!” and “Wow! He must really Love You to do all thatI” Most of them also requested, if she could find a way to steal the Recipes… She almost died!

They say, “Can’t you just get over it…?” Forgive sounds good. TasteeBQ is not quite sure he should…

The show had it’s Season Finale last Sunday, but TasteeBQ is still processing What Had Happened… Our Hero had been invited to make an appearance on the new television Show “FrankenBites” on Smack TV. It is a Cooking Competition where Superheroes from all over the world compete for a Power Supply of $10,000 dollars. For the occasion, he created the perfect dish: Smoky BBQ Bacon Cheddar CheeseBurger Popcorn. So far, so good… until the show’s Editors got a hold of the tape.

This creative dish can be made with an outdoor Grill or in the kitchen with a skillet (or grill pan), oven and a homemade Stovetop Smoker. It includes all of the elements of America’s favorite Sandwich: lean Seasoned Ground Beef, thick Smoky Candied Bacon and gourmet Cheddar Cheese. Instead of a Bun, TasteeBQ makes it into a Gluten Free Snack mixed with Popcorn and a HEROIC! BBQ Rub. Classic condiments are included: Pickles, Tomatoes, Green Chili Peppers, and even a special Mustard Ketchup Mayoli. A variation of the dish comes in Butter Lettuce Cups.

This fun variation served in Butter Lettuce Cups could be great for Halloween. The Popcorn is a hidden surprise underneath the “Eyes”.

On the day of the shoot, the Judges on “FrankenBites” gave TasteeBQ high praise for the flavors. One called the HEROIC! seasonings “Genius”. “Forget the $10,000 dollars”, he said; “We can take the dish and make $1,000,000 Bucks.” From there, things turned not-so-nice. Ironically, the ensuing Judge complaints were about the Popcorn Box and extra Kernels that TasteeBQ agreed to add at the last minute. In the end, our Hero had small objects thrown at him while being dragged out by a Producer. In turn, he decided to throw back his one shot at $1,000,000 Bucks: his Business Card. It was all done in Fun.

Not seen on the televised episode of “FrankenBites”, an online video of TasteeBQ’s encounter with the “FrankenBites” Judges was released. All positive praise for the dish is edited out, and a dumbed-down Recipe is added in. Ha Ha Ha.

SMOKY BBQ BACON CHEDDAR CHEESEBURGER POPCORN

Popcorn Ingredients

4 Cups Cooked Popcorn

1 lbs. 90%+ Lean Ground Beef
1 lbs. Smoked Thick Sliced Lean Bacon
2 Cups Smoked Shredded Cheddar Cheese
1/2 Cup Brown Sugar
4 Tbsp. HEROIC! by California Gold BBQ Rubs (I will provide)
2 Tbsp Cup Worcestershire Sauce
1 Cup Chopped Tomatoes
1 Large White Onions (Sliced)
Zesty Dill Pickles (optional)
Small Green Chili Peppers (optional)
Vermouth Marinated Queen Martini Olives (optional)

Hickory Chips

Sea Salt and Fresh Pepper to taste

BBQ SPICED MAYOLI

(list) INGREDIENTS
1/3 Cup Ketchup
1 Cups Mayonaise
1/3 Cup Yellow Mustard
1/2 Cup Chopped Green Onion

HEROIC! BBQ Rub

Directions:

-Preheat Grill or Oven to 430 degrees
-Season Bacon evenly on each side with Brown Sugar and BBQ Rub on foil
-Smoke on Indirect Heat or Bake Bacon until done on one side, then flip to finish second side. Set aside to cool as Candied Bacon hardens
-Season Ground Beef with Worcestershire Sauce, BBQ Rub, Salt, fresh ground Pepper -Form 1/2” Patties and cook evenly on Grill or Grill Pan
-Slice Onion into 1” Slices, season with BBQ Rub and cook evenly on both sides
-Stovetop Smoker- Heat Large Pot with small tray 1/4 cup Hickory Wood Chips, 4 to 6” high Cooking Rack inside Pot.
-Smoke cooked “Stovetop” Burgers on rack for 15 minute
-Smoke Candied Bacon on rack for 15 minutes
-Chop Tomatoes into 1/4” inch cubes
-Chop Grilled Onions into small dice
-Shred block of Smoked Cheddar, keep cool
-Season Popcorn with BBQ Rub, put on Smoker for 10 Minutes
-Add layer of hot crumbled Beef and chopped Bacon
-Add Minced Grilled Onion
-Add even layer of shredded Cheddar Cheese
-Serve small bowl of Mayoli on side for dipping
-Garnish Mayoli and Popcorn with Chopped Green Onion

Under the circumstances, TasteeBQ isn’t jealous that The Cafeteria Lady edged him out for the limelight of being ridiculed on National TV. He was pleased to be part of something that makes The World a Better Place to Laugh. If he is not cultivating the $1,000,000 Bucks next year, maybe TasteeBQ will go for a Round #2 rematch with the “FrankenBites” Judges. In the meantime, he will spreading joy with Smoky BBQ Bacon Cheddar Cheeseburger Popcorn wherever he goes.

What a difference a year makes. This was the very first episode of  “The Adventures of TasteeBQ”, released on BuzzFeed in January 2013. We are happy to bring it to WordPress, in an updated edited version. For the past year, the original article/short story has been shared almost everywhere. Grilled Burgers may be the goal, but there is more you can do with the Grill on Super Bowl Sunday.

Our hero TasteeBQ was called to the Rescue by Jill, a Damsel in Distress. Tired of frozen burgers and salty hotdogs for Super Bowl, Jill was determined to do something more exciting on the Grill. Plus, some of Jill’s expected guests were from the Tribe of Vegan. On a lifelong Mission to defeat his longtime archenemy Boren’GFood, our Hero is always happy to lend a hand. TasteeBQ flew to Jill’s lair immediately and was amazed to see her Pantry, which contained everything needed. With an assist on the Grill from her husband Jack, Jill was able to make 5 Super Easy Super Bowl Recipes for the Grill.

5 SUPER EASY SUPER BOWL RECIPES FOR THE GRILL

1. BARBEQUE CHIPS

Smoked Barbeque Chips- a quick and delicious recipe. Use whatever kind of Chips you like.

General Supplies: BBQ Grill (Gas or Charcoal), Wood Chips (Hickory, Mesquite, Cherry, and/or Apple), Grill Tongs and Spatula, Metal or Foil Pans and Aluminum Foil.

For Recipe: Chips, BBQ Rub or Seasoning

It’s not really a recipe, more of a Neat Trick or Technique. Use any flavor Chips you like, sprinkle with BBQ Rub (optional) and put them on the Smoker for 8-10 minutes. Use Indirect Heat Method to add a fresh, delicious Grill Smoked Flavor. This works especially well with Chips for dipping and served warm.

2. SMOKED NACHOS

Take your Nachos on a Detour to the Grill for some amazing flavor.

Supplies: Tortilla Chips, Cheese, Salsa and a variety of Toppings which can include: Chopped Onions, Tomatoes, Jalapenos, Black Beans, Sour Cream, Guacamole and Bean Dip. For meat, add Taco Seasoned Ground Beef, Cooked Chicken, Steak Bits or Crispy Bacon.

Layer the Tortilla Chips evenly across the bottom of Foil Pan. Sprinkle Chips with one layer of Shredded Cheese (helps prevent the Chips from getting soggy). Next, spread Black Beans (or Bean Dip), Chopped Tomatoes, Onions and a final Topping of Shredded Cheese. To the Grill! The Chips are smoked on Low Indirect Heat for 12-15 minutes. Guests can top their own Chips with Sour Cream and Guacamole. A choice of Mild Salsa, Jalapenos and Cholula (or Tapatio?) Hot Sauce would also be nice.

3. GRILLED CAESAR SALAD

Take some of the Romaine Lettuce to the Grill before mixing any Green Salad. It will add a Smoky new layer of flavor.

Supplies: Romaine Lettuce, Olive Oil, Caesar Dressing, Croutons and Parmesan.

Rinse and dry heads of Romaine Lettuce, then chop in half. Drizzle 1/3 portion (of all Lettuce) with Olive Oil and  grill on Medium Heat for about 5-7 minutes (until lightly caramelized). Then chop both Fresh and Grilled Lettuce into 2-3 inch squares. Toss in Caesar Dressing, (optional) Croutons and Parmesan. Add Chopped Fresh Basil and Cherry Tomatoes for even more flavor. Super Bowl Twist- Substitute large cracked Fritos or Doritos for Croutons.

4. SMOKIN’ HOT WINGS!

The short cut Recipe is to use pre-cooked wings for the Grocery Deli Dept. If you want to Grill Fresh – Go For It.

Supplies: Precooked Chicken Wings, BBQ Dry Rub, Wood Chips 

Re-season the Precooked Wings with Dry BBQ Rub/Seasoning. Then grill Wings on Low Indirect Heat for approx. 15-20 minutes. Use Wood Chips for smoked flavor.

For Buffalo Wings- Toss wings in Franks Hot Wing Sauce, garnish with Celery and Grilled Carrot Sticks.
For Barbecue Wings- Toss wings in your favorite BBQ Sauce, garnish with Grilled Texas Toast.
For Teriyaki Wings- Toss wings in your favorite Teriyaki Sauce (Asian Sesame Dressing is also OK), sprinkle with Chopped Green Onions.
Serve Wings with Bleu Cheese and/or Ranch Dressing on the side for dipping.

For Fresh Chicken Wings, season overnight with BBQ Rub. Grill for 40 Minutes to 1 Hour before Tossing in Finishing Sauce.

5. BISTRO SLIDERS

Supplies: Ground Beef, BBQ Dry Rub, Salt, Pepper and Worcestershire Sauce.  Mini Hamburger Buns; optional Condiments- Cheese, Tomatoes, Lettuce, Onions, Pickles, and Jalapenos. Sauces- 1000 Island Dressing, Herb Mayo (Mayo mixed with Dry Garlic/Italian Seasoning), BBQ Sauce, Stoneground Mustard and Ketchup (for the kids).

Use 1/5 to 1/4 lbs. Ground Beef per Burger. Season with Salt, Pepper, BBQ Rub and Worcestershire Sauce. Make small Patties and Grill on Medium High Heat for 8-12 minutes, depending on thickness/desired doneness. Flip Burgers at 4-7 minutes, then add Cheese halfway thru second side.

Success!!! At no point throughout the Super Bowl Party did the villainous Boren’GFood dare rear his ugly head, to dampen the Fun. Those Burgers made Jack the King of the Hill. He and Jill celebrated with a Touchdown Dance after bidding “Farewell” to their guests. TasteeBQ did the Moonwalk, as well. Going back faster and faster, gliding backwards until he was Out-of-Sight(!). That is, until Valentine’s Day…

‘Tis the Season of Giving, Joy to the World, Chestnuts Roasting… Yada, Yada, Yada.  Our superhero TasteeBQ doesn’t begin his Holidays Celebrations in September (Like many Retailers. Next year they will be starting in August). Like many of us, the Holiday Spirit doesn’t usually take him over until the final shopping weekend before Xmas. This year he was planning to gift- to family and friends- his favorite, most essential Grilling accessory: Coal. But something told him that it wouldn’t be received in the spirit intended. So TasteeBQ had to come up with another plan.

He was sprinkling BBQ Dry Rub on his Deluxe Mixed Nuts, and preparing to cook them on his sunny California Smoker. Then, TasteeBQ got Zapped with a sudden burst of inspiration. He began to think about all of the unfortunate Boys and Girls throughout the World who are not privileged enough to live in California and have access to Grills from Webber, Char-Broil or the Big Green Egg- yearround. Some people even live in Apartments. While others may not be able to excavate their BBQ Rigs from “Let it Snow” Land. More interactive than those screechy Musical Holiday Cards, he decided to bestow the Gift that keeps on Giving: The DIY Stovetop Smoker (STS).

HOW TO MAKE A DIY STOVETOP SMOKER-[STS] FOR .99 CENTS

Here’s all you’ll need:

1- Large Pot or Dutch Oven/ with Lid (Heavy Bottomed or Cast Iron will work best)

1- Steaming Tray or Rack (to fit inside of Pot)

1- Bag of Mesquite of Hickory Wood Chips from the .99 Cents Only Store.

Aluminum Foil

Place Wood Chips in foil basket at bottom of Pot. Less than 1/4 Cup is fine.

Before you run out to grab a Whole Hog or 50lb. Chicken, bear in mind that this technique works best for small portions of Prepared Foods. Stovetop Smoking is a quick and easy way to infuse real Natural Wood Smoked Flavor, without leaving your Kitchen. Chefs have used similar techniques for decades doing indoor Tea and Herb Smoking, with Fish, Potatoes and other Veggies. TasteeBQ has just began to experiment with translating it to BBQ. So far the results are simply delicious. [Others have also discovered this technique, see Links].

Basic Technique

1. Put Pot on Stove, with small foil pouch of dry Wood Chips (no more than 1/4 Cup) placed in the center.

2. Place Rack inside Pot with the Food to be Smoked

3. Cover Pot with Lid (leaving small vent) and turn burner to High. You should start seeing smoke in 3-5 Minutes. From there it depends on what you are Smoking. Let’s experiment together. Maybe we can compile 100+ DIY Stovetop Smoker (STS) Recipes in time for the next Super Bowl. Many of you will still be in the snow, so it should work out nicely.

Here are some Suggestions to try, followed by our first 2 DIY STS Recipes.

For Precooked Snacks, Pasta, Nachos, Nuts, Popcorn, Pretzels:

Place Food on open foil tray, preseason with BBQ Rub, or seasoning mix of your choice. Once lid begins to smoke, close lid. Cut heat to medium for 2-3 Minutes, then cut off. Leave food in closed chamber for 10-15 minutes (until smoke dissipates. In case of emergency, always have a fire extinguisher in your kitchen and pre-clear a path to an outside door or window where you can release smoke.* An built-in intake system is even better.

*This shouldn’t happen if you stick to less than 1/4 Cup of Wood Chips and turn off burner in regular intervals while cooking, or every 15-20 minute Smoking Cycle.

For Pre-Roasted, Baked or Smoked Meats, Bacon, Fish and Vegetables, Pizza, Rice, Pre-cooked Baby Back Ribs, Hot Wings:

Start with above instructions. The idea is to warm it through on your DIY STS. Pre-warmed or room temperature food will absorb smoke faster, so it could be good to go after only one Smoking Cycle. Cold leftovers may take 2-3 Cycles.

For Uncooked Meats, Potatoes, Root Veggies

TasteeBQ has recently learned that he is not the first, or only one to think of this Stovetop Smoking technique. A quick web search found blogs as old as 2012. Most of them suggest to STS the meat on low for up to a couple of hours, then finish in the oven.  This will also provide a milder flavor. The other way is also fine- cook Meat first, then set it in the STS for a Smoke Cycle or Two. Links to referenced Articles appear below.

“Next Day” Salmon smoked in Stovetop Smoker for 2 Smoke Cycles. Season with POWER Rub, over Cheesy Garlic Fettuccini.

This a great “Next Day” Recipe for leftover Grilled, Baked or Smoked Salmon. We served ours over a bed of Cheesy Garlic Fettuccini.

1. Place Portion of Salmon on Foil. Spritz with water or Citrus Juice to help maintain moisture.

2. Re-season Salmon with BBQ Rub or Spices and Herbs.

3. Cook on STS for 1-2 Smoke Cycles until warmed through. Finish with Tzatziki Sauce with Dill or Garlic Herb Seasoned Butter.

He knew it would happen one day, but didn’t think it would come so soon. Nowadays, every new business dreams of getting hooked up on television’s most popular Business Dating Game. There he was- our superhero TasteeBQ- in the same room with the famous “Angel” Investors from the TV show “Shark Bait”. With thousands of witnesses, to boot. A few months ago, our hero attended a “Shark Bait” audition, but only got to meet with a Casting Director. It seems his new BBQ Rub Business is too small (and new) to make it onto the Big Show. They managed to work straight through the recent government shutdown, urging us to stick with business-as-usual despite the uncertainties. Now the DOW is breaking records. But that’s big business- and another story.

At six months old, POWER Rub isn’t earning million$ yet. However, the company has made great strides thanks to the agencies’ help. As well as breaks from the small restaurant and retailers who have agreed to carry the product. In fact, the first run of POWER is almost sold out and the company is ready to release a second new Rub, to be called HERO. To grow his company, TasteeBQ has had to hire a few consultants and they charge large Chuck$ of Change in advance.

3) Take advantage of Free Online Seminars and Webcasts. Our Superhero loves making dates to catch live Webinars from some of the Retail Industry’s brightest experts. The price is right. They are not only offered by the SBA, but free ones are also sponsored by Amazon.com, Google AdWords, American Express and Constant Contact (to name a few).

4) Get Free One-on-One Business Counseling- Many Business Consultants charge anywhere from $80.00 to $400.00 an hour, or more. After Orientation, TasteeBQ was given a main SBDC Counselor to help him improve his Business Plan. Then he was eligible to receive more Free 1 Hour Sessions with experts in Marketing and Social Media. They have been an invaluable help and only take 2-3 Hours a month.

5) Receive Help Funding Your Business- Stop wasting hour after hour chasing those Online Business Loan schemes. Believe it or not, TasteeBQ spent days web surfing for leads. Instead of Loan Sharks, he found himself swimming away from lots of Phishes. After a one hour meeting with his knowledgeable SBDC counselor, he walked away with the tools for his company to land expansion help from the big bank Swells Largo. The SBDC can help you find credit for Small Businesses of all shapes and sizes.

Back to the Sharks, from the TV Show “Shark Bait.” Unfortunately, our hero didn’t bring any POWER Rub with him while attending last week’s live taping of the American Muzak Rewards show. TasteeBQ was there, enjoying live music from top acts like Katie Sperry, Justhim Woodlake, Rhiaria, Mylita Cyrcus and Laydie Gotcha. The Sharks must have known that TasteeBQ would be there. Why else would they agree to hop a jet to L.A. and give out a paltry award to the Best Pop/Rock Duo/Group/Band? Of course it was won by Won Direction.

The 4 Sharks waited over 2 1/2 Hours to hit the stage. Could you imagine how much that would cost per hour for a consultation? While sitting around, they pretended to enjoy all of the live music. As a last ditch effort, when they came on stage, the 4 Sharks gave a Free One Minute Consultation on how Forming a Rock Band is like Building a Business. TasteeBQ Reveals Secrets for Cooking Smoked Food

Has your BBQ Season already started? With the great American Holiday coming up, even “holdouts” will be firing up the Grill for the 4th of July. If you want to step up your food this year, consider converting your Grill into a Smoker. It is much easier than you’d think, and smoky natural wood flavor will add an all-new dimension to everything you cook. —TasteeBQ

Our superhero, TasteeBQ was recently summoned to a beautiful home in the Hills above a popular California Beach for a special Father’s Day grilling lesson. A really nice family needed rescue help for their Grill- which came with a French sounding name and lots of Infrared attitude. TasteeBQ offered the following Tips:

Wood Chips on Charcoal
If you have any sort of outdoor Grill, it can be used as a smoker with the help of Wood Chips. Use them dry for Gas Grills and wet for Charcoal. Be sure to use with Indirect Heat.

Easy Tips For Food Smoking:

1. The Key to Smoked Food Cooking is: “Low and Slow”.
2. Indirect Heat Method allows food to absorb delicious smoked flavor without overcooking.
3. For Charcoal Grilling- Soak the Wood Chips or Chunks for at least 1/2 hour in advance.
4. Gas and Infrared Grills may add dry Chips or Pellets to built-in or store bought Smoke Box or Tin. Or go “Hobo” and place the dry Chips into double-ply Aluminum Foil Pouch.
5. Either way, 1/3 Cup of Chips should be placed on Coals or Hot side of Grill. Use Low or no Heat on Smoking/Cooking side of grill. Replace chips whenever smoke runs out (30 mins to Hour).

You can use these Tips to add a new twist to some Traditional 4th of July BBQ Dishes-

4 EASY BBQ RECIPES FOR the 4th of JULY

1. SMOKED CHIPS
Rather than serving your Chips from Bag to Bowl, let them take an 8 to 10 minute detour to the Smoker. Put Chips in a tin, aluminum pan or homemade Foil Basket. Works with all kinds of Chips from Potato, Corn, Veggie or Pita. For a twist, sprinkle Chips with a Delicious BBQ Rub (like HEROIC! from California Gold BBQ Rubs) or Grill Seasoning before and after Smoking (stirring chips halfway through).

2. SMOKED HOT DOGS
Yeah, most of the packages say the wieners are “Smoked”, but you probably haven’t tasted a truly Smoked Hotdog until you try this. Cook Hotdogs on the slow, cooler end of Grill and let them warm up for about 12-15 minutes. Flip in middle of cooking once they start to plump up and take on color. When they start to blister or separate, it is their way of announcing “Done!”.

3. SAVORY BBQ BURGERS
Use this recipe for 1/2lb. Big Boys, to 1/4 Pounders or 3oz. Sliders (can cut hotdog buns into 2-3 sections to save on overpriced store “Mini Buns”).

For each 1lb of Ground Beef or Turkey mix in:
2 Tbl. Worcestershire Sauce
1 Tbl. BBQ Sauce
1 Tbl. Paprika
1 Tbl. Ground Turmeric (may substitute Mustard Seed)
2 Tsp. Salt
1 Tsp. Ground Black Pepper
[Optional- Add 1-2 Tbl. of your favorite Grill Seasoning or a Delicious BBQ Rub (like HEROIC!), which can also be used to make Gluten Free BBQ Sauce]

Mix well and return Meat to Refrigerator until ready to cook. Separate Meat into desired size Patties. Sear on both sides using Hotter part of Grill. When they are just under desired doneness, move Burgers to cooler side and let smoker finish cooking (this is also good time to add slice of cheese). Serve with BBQ Sauce and/or Mayo, Mustard, Ketchup. [Cheese, Tomato and Lettuce Optional]

Bonus Tip-

Strike While the Fire is Hot. You can also use Grill to kick-up your Condiment Bar for Burgers and Hotdogs. Key is to prepare Veggies in large portion, then cut to size after Grilling. Coat with oil and herbs or use a really Delicious BBQ Rub (like HEROIC!). Try this with Onions (slice thick, then separate or chop), Bell Peppers, Pickle Spears. Tomatoes, Lettuce, Fresh Chilies or Jalapenos, etc…

4. SMOKED CORN
Prepare Fresh Corn- Remove hard outer husks from each ear of Corn. Trim stem to 1 inch. Leave a small layer of tender husk attached. Pull husks back and remove as much silk as possible (Run under sink?). Then replace husk back around Corn.

Soak Corn- Immerse Corn cobs in water for minimum 1/2 Hour to Overnight. This will tenderize Corn and moisten husk so it doesn’t burn (and protects Corn on grill). Also adds more corny good flavor.

Cook- In Smoker or Grill for 15-20 minutes on moderate heat, rotating to get some color on all sides. You can tell it is done when kernels feel tender. [No Grill?- Place Corn in microwavable dish, in shallow water for steaming. Cover with plastic wrap or glass lid. Cook on High for 6-8 minutes, rotating midway through, until tender]. When cool enough to handle warm Corn, pull back husk (and snip)

Seasoning Bar- Should include basic Butter, Salt and Pepper. For more variety, have available Mayonnaise, Hot Sauce, Garlic Salt, Italian Seasoning and/or a really Delicious BBQ Rub.
